A Delish Chicken Meal by Mistake (Tales of Slaying the Missing Ingredient Dragon)

Mistakes happen. All the stinkin’ time. In fact, I don’t remember a day going by that there isn’t some kind of mistake, mostly minor, that takes place.

The Kitchen Kingdom is no exception. Literally, I will think I’m ready to go into battle and slay the dinner for my husband and I, when all of sudden the dragon of missing ingredients sweeps my feet out from underneath me. At least two times per month, I find myself looking up at the dragon of missing ingredients and think “I shall still slay thee with my arsenal of present pantry staples.”


OK really, I just jazzed up the whole experience. In reality, I am hovering over my recipe and go “Crap!  I don’t have enough olive oil or flour.” Or in this case, “tortillas!” I was literally making chicken tacos and did not realize I did not have any tortillas left! Who does that? Well, apparently, I do.

Hopefully, I am not the only knight stepping up for battle confident in my sword of Gryffindor and when I pull it from my sheath, it is merely a Swiss Army Knife. If you say I am, you are a dirty liar and I hope your pants are on fire.

God gave us creative, problem-solving minds to conquer these battles. Here is my small conquest. Without further a due… My chicken meal by mistake. I love this recipe I found on Pinterest.

My mistake, I had no tortillas. Therefore, I simply opted for the chicken breast topped with the avocado creama then the pineapple salsa. Both the sauce and salsa were completely to die for.  I garnished the plate with leftover pieces of pineapple and lime, which could also be used to add additional flavor to the dish. Maybe it was a small mistake but even lacking all of the appropriate ingredients, I was still able to pull off a gourmet meal.

Don’t let things like missing ingredients stop you from jumping into the kitchen. Take control. You can decide how to cook your meal. You are only defeated if you do not attempt to slay the dragon.
